Weekend In the Mountains ~ Fiesta Jalisco Mexican Restaurant ~ My New Fav!


We headed up to Avon this weekend to bring all of our ski/board gear up for the season.  I spent most of the weekend cleaning this great little condo that hubby found while I was away at SITScation a few weekends ago.  He did really well!  It is a cute little remodeled 2bed/2bath condo with washer/dryer right on the river within walking distance to Bear Lot at Beaver Creek.  The kids love that it is right on the trail and just a short walk away from several parks.  It is perfectly tiny but will save us in hotel fees this winter!


On Saturday, we stopped in at Fiesta Jalisco Mexican Restaurant in Avon.  OMG - it was awesome!  I ordered a combo chicken burrito taco plate.  I fell in love with this place as soon as I cut into my burrito and tasted REAL chicken.  My meal wasn't heavy and fatty at all and it was delicious.  We all enjoyed our food immensely.  John ordered a seafood soup thing and it had actual real seafood in it!  


Today, John took the boys and the dog and walked all the way to Edwards.  I stayed behind and finished cleaning (the cute little condo needed major cleaning).  We decided that I'd meet up with them for lunch at The Riverwalk.  Guess where we ate?  There is a Fiesta Jalisco Mexican Restaurant in Edwards too!  Don't laugh, we actually ate there again today and it was perfect because they had outdoor seating so we were able to sit outside with the dog.  Today, I had a chicken taco salad and it was yummy.  It didn't have a ton of cheese on it, but I'll be grateful for that when I head to Weight Watchers this week.  I do have to say that I don't love their salsa because I prefer more of a chunky salsa, but they serve it with shredded cabbage and it makes for a nice change from what we normally expect at a Mexican restaurant.  So, if you are looking for great Mexican head to Fiesta Jalisco - they have locations all over Colorado.


The best part of having this little condo is that we'll be able to miss the ski traffic and take our time heading back on Sundays.  Tonight we had dinner and then the kids took baths, brushed teeth, and put jammies on before we headed home to Denver around 6:30pm.  All three of them fell asleep in the car and hopped right into bed as soon as we got home.  Perfect!

    I weekend trip, sounds like great fun! I'm just looking forward to a weekend where my children don't have ANYTHING to do, so I can visit my friends almost 2 month old grandbaby.

    That sounds perfect minus all the you being left behind or by choice staying behind to clean for a portion of the weekend!
